Sea Scallops

75500 – Fresh Sea Scallops

  1. Pat dry and sprinkle with salt and pepper. Pat the scallops dry with paper towels. Season generously all over with salt and pepper.

  2. Heat the pan. Heat the butter or olive oil in a large frying pan over medium-high heat. When a few flecks of water evaporate on contact, the pan is ready.

  3. Add the scallops to the pan. Place the scallops in the pan in a single layer, spaced about an inch apart. The first scallop should sizzle on contact. If it doesn’t, wait a few seconds to let the pan heat before adding the rest. Do not crowd the pan; work in batches if necessary.

  4. Cook the scallops for 2 minutes, then flip. Cook the scallops undisturbed for 2 minutes. If the scallop doesn’t release easily from the pan, let it cook for another few seconds until it does. Flip the scallops over.

  5. Cook the scallops for another 2 to 3 minutes. Cook the scallops on the second side undisturbed for 2 to 3 minutes more. Both sides of the scallop should be seared golden-brown and the sides should look opaque all the way through. The scallops should feel firm to the touch, but still slightly soft, like well-set Jell-O; do not overcook or the scallops become tough and chewy.

  6. Serve immediately. Serve the scallops immediately while they are still warm.

Lobster Tail

Stove Top:

To cook four 8-ounce tails, bring 6 cups salted water to boiling in a 3-quart saucepan.

Add the defrosted lobster tails. Simmer, uncovered, for 8 to 12 minutes or until shells turn bright red and the meat is tender when poked with a fork.

Conventional Oven:

Defrost lobster tails.  When the lobster tails are defrosted, insert point of kitchen shears between the meat and the hard shell.

Cut the shell down the center of the back with scissors, leaving tail fan intact.  Lift uncooked tail through the slit to rest on the top of the shell (this is called a piggyback lobster tail.)

Preheat oven to 350 degrees.

Do not overcook, as the lobster will become tough and rubbery. While cooking, lobster shells will turn their characteristic bright red color well before the meat is thoroughly cooked inside.  Serve immediately.

Grill:

Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.

Broil:

Set oven control to broil.  Sprinkle both sides of defrosted fish filets with desired seasonings and place onto broiler pan or in a baking dish.  Place on a rack approximately 4 inches from the heat source.  Broil for 5 minutes on each side or until fish flakes easily with a fork.   Brush tops of filets with butter/margarine if desired.
